I think we actually have all of the crafting professions covered, so feel free to pick something you want to level.
I'm guessing that Jewelcrafting probably offers the best bonuses by a slight margin for rogues, but it's pretty expensive to level. You could always pick up alchemy or inscription and drop skinning, since you already have herbalism.
Engineering probably has the biggest fun factor and some decent bonuses too.
